April 4th, 2007 - The Bistro is getting closer to being complete, but there is no solid opening date appearing in the crystal ball. We'll keep you updated on that project. We are going to add a section to the website about Cottonwood publicity. We've been unexpectedly fortunate to have some great press and we'd like to share. In the meantime, check out this cool video that some fine students at SDSU put together for a class project. Cottonwood Video. (link to video and sound)
February 6th, 2007 - There are many new faces around Cottonwood these days. We've hired a few people to help fill schedule gaps and in anticipation of even bigger news...yes, we are indeed crazy and yes, we are opening a new store in Brookings!!! Cottonwood Coffee will be taking the circus on the road...at least to 1710 Sixth Street (aka Brickwood Plaza, aka old Mad Jack's). So, many people have asked us, 'What is going to change?' Not much and a lot. We'll still be offering a classy, casual atmosphere with great espresso and coffee. This time though, we'll be expanding the food options with more breakfast and lite evening offerings. We think you'll be pleasantly surprised. More questions? Contact Jacob.
December 17th, 2006 - As you can see from the lack of news updates, we have been extraordinarily busy at the shop! The response has been wonderful and these last several months of hard work have definitely been fueled by the excitement in what we're doing. In real news, we have made the most fortunate switch to a new roaster, PT's from Kansas City. Many thanks must go to Michael and his colleagues for all of the training and great service. Oh! And I shouldn't forget that we have been certified for the Specialty Coffee Association of America's Golden Cup Award of Excellence. That is quite a mouthful to say that we have coffee of the highest industry standards. Of course, we knew that, but it sure doesn't hurt to have a big industry group give us the thumbs up.
July 15th, 2006 - Finally! The long-awaited opening day has come and gone, much to the relief of all. Don't read the other news entries talking about optimistic opening dates. This project was bigger than any of us really understood, but the end result was worth every ounce of extra effort. We are currently open with all coffee and beverages, as well as absolutely irresistable baked goods provided by our baker, Jill. Soups and sandwiches will be on the menu when we get the kitchen organized; so probably a couple of weeks. Please stop in and thanks to all of the volunteers and supporters of Cottonwood Coffee. We are deeply thankful!
March 13th, 2006 - Renovation work is moving along nicely and we still feel confident that the doors could be open for business in March, but it will be tight. Paint is on the walls, a new tile floor is in the kitchen and the 1895 maple flooring is stacked up ready to be installed. We will be burning the midnight oil to get everything ready for the opening, so stop by and see what is happening if you're downtown.
February 13th, 2006 - We're just starting to publicize the fact that we even have a website, so hopefully more and more people will be visiting in the near future. Renovation work is moving forward at breakneck speed; definitely check out the Pictures page and if you are in Brookings, stop down and say hello! Rumor has it that Jacob procured a stack of free drink cards and is looking for people to give them to.
Employment - Cottonwood Coffee is looking for a few energetic, talented people to work as baristas. Beyond working with great people, you'll have flexible hours and be learning a valuable art form. Make sure to get ahold of Jacob so you can fill out an application. We plan to get the apps up online in the near future and we'll also be advertising in the Brookings paper. If you can't find Jacob at the store, try 254-2908.
Bands and artwork - We are also looking for local talent to decorate the walls and fill the store with melodic uphoria. If you paint, draw or take pictures, contact Jacob and arrange to get your art in Cottonwood Coffee for everyone to see. If you play music that would suit a coffeehouse setting, also contact Jacob to see if we can get you in.
